Mini-Baked Potato Bites

Servings: 15 potatoes

Ingredients

  • 1 tub Plucky Pickle Dip®, Original  

  • 15 Baby Potatoes

  • ½ cup Shredded Cheddar Cheese

  • 3 Tbsp Green Onions, sliced

  • 1/3 cup Crumbled Bacon

Instructions

  • Place potatoes in a pot and cover with cold water. Bring to a boil over medium heat. Boil for about 12-15 minutes or until fork tender. Drain potatoes and set aside.

  • Preheat oven to 425º. Line a baking sheet with parchment paper and set aside.

  • Cut the potatoes in half and use a teaspoon to scoop out a small divot in each potato. Place the potatoes in a single layer on the baking sheet. Brush the tops with olive oil or melted butter and sprinkle with salt. Bake for 12-15 minutes until the tops start to brown and get crispy.

  • Remove from the oven and top each potato with a teaspoon of cheddar cheese and bake for another 2-3 minutes until melted. Remove from the oven and let the potatoes cool for up to 5 minutes. Add a dollop of Plucky Pickle Dip®, Original to each potato and sprinkle with bacon crumbles and green onions. Enjoy!
