Spicy Pickle Elote

Ingredients

  • 1/3 Cup Plucky Pickle Dip®, Spicy

  • 4 Ears of Corn, Grilled

  • ½ tsp Lime Zest

  • ½ tsp Chili Powder

  • ½ tsp Cumin

  • 2 Tbsp Cilantro, chopped

Directions:

  • Before grilling the corn, mix the dry chili powder, cumin and lime zest together in a small ramekin.

  • Prepare the corn for grilling by peeling back the husks. Leave the husks attached at the base of the corn. Remove as much of the corn silk threads as you can.

  • Soak the cobs in cold water for 10 minutes to prevent the husks from burning when grilled.

  • Grill the corn over medium heat, turning every 3-5 minutes until all sides are cooked (about 15 total minutes)

  • Once corn has cooled a bit, spread the Plucky Pickle Dip®, Spicy over the corn.

  • Finish each cob by sprinkling with the dry cumin, chili and lime zest mixture. Garnish with cilantro and enjoy!
